Snack red mullet fillets, creamy  polenta with olives, pine nuts, a Pesto of Broccoli.


Pan Fried “Omble Chevalier” Fillet,  Cereal Pearls "Fregda Sarda" paella style, a Cauliflower mousse,  Saffron Sauce.


1/2 Pigeon Roast Landes in a box of  hazelnuts, a blinis, quinces candied with Ginger, crushed sweet potato, a sauce  of Sichuan pepper.
